Sheep herders breakfast

I haven't tried this one yet. I found it in the food section of the Hartford Courant and it looked like an excellent camping breakfast. I received a note from Mike C. saying he tried this recipe and thought it was excellent.   I finally tried this one on 6/30/2000. See below for the Mike & Ron version.

 

1 lb bacon

1 large onion, chopped

1 (32 oz) bag thawed hash browns

1 dozen eggs

8 oz shredded cheddar cheese

 

Cut bacon into 1-inch pieces and brown bacon and onions in a large Dutch oven or skillet. Drain excess grease. Add hash browns and cook until they begin to brown. Make wells in the hash browns and put an egg into each depression. Cover and cook until eggs begin to set. Cover with cheese and cook until cheese melts. Serve immediately.

 

Mike and I tried this and it came out excellent. A vary tasty and filling breakfast. We used a cast iron dutch oven and the cleanup was a chore. I will try another type dutch oven next time. Also... the bacon gets reconstituted from the water in the potatoes and onions, so I suggest browning the bacon well before adding the onions.  Here's what the finished product looked like.
