Pizza Quiche

       350*                 9x13x2 baking pan

 

1 pound hot or mild Italian sausage
1 (15 oz.) container Ricotta cheese
6 large eggs
2 cups shredded Mozzarella cheese
6 ounces sliced pepperoni -- chopped
1/2 cup grated Parmesan cheese

Pizza sauce

 

Remove casings from sausage. Cook sausage in a medium skillet until browned, stirring to crumble; drain well and set aside.

Combine Ricotta cheese and eggs; beat well. Stir in sausage, Mozzarella, pepperoni, and Parmesan. Spoon into baking pan. Bake at 350 degrees F. for about 45 minutes. Let cool 10 minutes; serve with warm pizza sauce (optional).  8 servings
