Super Easy 500 Degree Eye of Round Roast

 

1 Eye of Round Roast (2-3 pounds)                           Preheat oven to 500. 

 

Season roast as desired; place on rack in shallow roasting pan.  Do not add water or cover.  

 

Place roast in the preheated oven and lower temperature to 475.  Roast at 475 for 7 minutes per pound.

 

Turn oven off and let roast sit in oven 2-1/2 hours.  DO NOT OPEN OVEN DOOR DURING THIS 2-1/2 HOUR TIME PERIOD.

 

Remove and slice.  An au jus type gravy can be made with the pan drippings.

 

To season roast:

McCormick California Style Crushed Garlic.  It comes in a 4.25 oz. glass

jar.  Or use minced garlic and put in small food processor until like a paste.  I use that as a base, put in a couple of tsps. each of rosemary & thyme, some salt, a whole bunch of pepper, and a couple of drops of olive oil just to make it pasty.  Mix it all up good, then spread it on outside of the roast, all over the top and sides.
